Ginger Bug and Ginger Soda

Ginger Bug To start

2T ginger (chopped, not peeled, preferably organic throughout)

2 T sugar2 c waterMix well. Cover.

Daily Feed 2 T sugar + 2 T ginger

After about a week, some bubbles, cloudy. It’s ready to make soda.

To make soda

Ginger Beer recipe from Joshua Weissman:

2 quarts filtered water (or herbal tea)

1 1/4 cup plus 2 tablespoons (273g) granulated sugar *see notes*

1/4 cup (54g) ginger, grated

1/2 cup (110g) strained ginger bug liquid

*optional* Juice of 3 lemons (or limes)

  • 1 quart water (This could be sweet tea, or lemonade, or juice. If so, adjust sugar)
  • ½ cup sugar (+-, flexible)
  • 1/8 cup chopped up ginger
  • Simmer all that for 5-8 minutes.
  • Use ½ cup sugar to 2 quarts of water. Food process the ginger for deeper flavor. Add 4 Tbsp of lemon juice
  • Ingredients:
  • 4L water
  • 400g ginger
  • 500g sugar
  • 3 star anise
  • 30 black peppercorns
  • 12 allspice berries
  • 12 cardamom pods
  • 3 cloves
  • 200 mL ginger bug

  • Ingredients:
  • 4L water
  • 400g ginger
  • 500g sugar
  • 3 star anise
  • 30 black peppercorns
  • 12 allspice berries
  • 12 cardamom pods
  • 3 cloves
  • 200 mL ginger bug

(BTW, this chai like version is delicious, and with the ginger blended in, super ginger flavor!)                     
COOL TO ROOM TEMPERATURE SO YOU DON’T KILL THE MICROBES.Strain out the ginger with slotted spoon.Add ¼ cup plus of ginger bug liquidJuice of 1.5 lemonsPour into flip top bottle or soda bottle. Leave on counter top for 3 days (release gas daily and don’t let it explode).

Then PUT IT IN THE FRIDGE SO IT DOESN’T EXPLODE.
